That's pretty much exactly how my sensei approached teaching us shuri-ryu. He always stressed that practice does not make you perfect but perfect practice does and that we never truly "knew" any of the forms or moves he was teaching. He would always try to catch us saying we did. No matter what level you were he would react by either verbally harrassing you about it or by calling you out on the mat, making you perform whatever it was you thought you knew, then after you did so poorly due to nervousness, have another student attack you to see just how much you "knew". Good times.

That's where I get my outlook that you don't know anything about defending yourself until you've lost a fight. Winning just means you fought someone who understood less than you. Losing means you are now aware of s/t new to practice.
